Farfalle with Mushrooms and Spinach

As a part of my trying to eat less meat for dinner this week, I made a new vegetarian dish last night. The recipe from sparkrecipes.com was easy to follow and the meal tasted great! By making this new dish, I have also completed my twelfth new recipe for the year as a part of my 25 by 25 list!

Farfalle with Mushrooms and Spinach

Serves 4
Nutrition per Serving: 217 calories; 5 fat; 38 carbs; 8 protein

Ingredients

6 oz farfalle pasta
1 Tbsp olive oil
1 med onion, chopped
4 oz fresh mushrooms

3 cloves garlic, minced
4 cups spinach, thinly sliced
1/8 tsp fresh ground pepper
2 Tbsp shredded Parmesan

Directions

1. Cook pasta according to package directions. Drain.

2. In a large skillet, heat oil over medium heat. Add onion, mushrooms and garlic and cook, stirring occasionally, until tender or 10 minutes. Stir in spinach and pepper and cook until spinach is slighlty wilted, about 1 minute.

3. Toss mushroom and spinach mixture with pasta and sprinkle with cheese. Serve.
