Since my friend's wedding is coming up fast (next weekend) I have amended my goal weight, again. I want to reach 230 by the wedding. That's 4 pounds in two weeks. Totally doable!

Goaloflosing... An Award Winning Blog?

Mary over at A Walk in the Woods has chosen me to receive a Liebster Award!  I was really surprised when I learned that I had received an award, but to be honest, I had no idea what the Liebster Award was! Apparently, the Liebster Award is given to upcoming bloggers who have less than 200 followers.  The meaning for Liebster is German and means sweetest, kindest, nicest, dearest, beloved, lovely, kind, pleasant, valued, cute, endearing and welcome.

So, first I will post 11 things about myself:

1. My name is Kay and I am overweight. My all time highest weight was 268 pounds in March, 2012.

2. I once saw 271 lbs on the scale, but it was right after eating so I refuse to count that!

3. I am 24 years old and am the oldest of 5 siblings, ages 16; 11; 9; 5, and; 2.

4. I work as a paralegal for a child welfare agency.

5. I have been diagnosed with Multiple Sclerosis (MS), Polycystic Ovarian Syndrome (PCOS), and Factor V clotting disorder.

6. Having PCOS will make it hard for me to have kids one day; however, I would love to have at least one child in the future.

7. I am married to my high school sweetheart. We have been together since we were both 15 years old. He has always been and continues to be my number one supporter in everything that I do.

8. I ran my very first 5K race in June, 2012. I never thought that I would enjoy running in a race as much as I did. I can’t wait to do another!

9. My husband and I have 2 dogs and 1 cat.

10. I am trying to lose a total of 100 pounds and reach my goal weight 168 lbs.

11. Even though I always loved sports while I was in school, I stopped playing them in middle school because of my weight.

1. What inspired your blog name? Every New Year’s Resolution I could ever remember included a goal of losing BLANK amount of pounds before the next year. That’s where “goal of losing” came from!

2. What do you like most about blogging? Blogging is my way of sorting out my thoughts and struggles throughout my journey. It’s a way for me to be held accountable for what I’ve done and a place where I can keep all of my goals in order.
3. What was your dream job when you were a child? I wanted to be a famous singer. I don’t even have a good voice but now-a-days I don’t think that’s even necessary!


4. Where is the furthest place you've ever travelled? Ensenada, Mexico


5. What is the strangest or most exotic food you've ever tried?  And did you like it? I think that trying squid (calamari) was strange for me and I actually love it and order it often.


6. What is your favourite film? Right now, I’ve been watching Adventureland over and over. I just think it’s a great summer movie.

8. Do you have a crazy, far-fetched ambition and what is it? I’d love to go to Paris or Italy.

Best Thing About Not Losing Weight

Are you wondering if I have lost my mind? Well, you are not alone. Am I really going to post a blog regarding the best thing about not losing weight right now? How could that ever be a good thing? Let me try to explain.

After losing 35 pounds in about a year, I have been stuck around the same weight (232 lbs.) for many months, now. I am trying to stay positive so I started thinking about the best thing about not losing weight. It is kind of hard to do, but I think the best thing about not losing weight is that I'm not gaining it! Granted, I have gone up a few pounds, back down, then up, then down again; the great part of this is that I never gained more than 8 pounds since losing 35, and I have always managed to get back down to where I was. This, for the most part, is called maintaing your weight.

Even though I haven't been able to bust through my current lowest weight, I must say that I am proud that I have not only lost 35 pounds so far, but that I have maintain that loss for a substantial amount of time! These past few months have given me great practice for what is yet to come; maintaining my goal weight. I now know that I will be able to do it! I will be able to maintain my weight loss when it happens. I have it in me; I have done it!

So, there you have it! I'm convinced. If there is a silver lining to not losing weight, there really must be an upside to just about everything in life. You just have to search for it!

Living By Those Words

This morning I woke up early. I ate a piece of quiche with a glass of orange juice on the side. Since I had about 20 minutes before I had to get ready for work, I took Max for a walk.




It was a nice way to start the morning. I know that Max would agree!

I have a neurologist appointment at 1:40 this afternoon because I've experienced a minor flare ups with MS. Eye problems and fatigue are the most prominent symptoms right now. The fatigue has been around for weeks. Oh, how wonderful it would be to not feel so weighted down all of the time! I always get nervous about these appointments, both because I don't like doctor appointments and because I'm missing work for it.

My mom told me the other day that things work themselves out whether or not you stress about them. I've been living by those words a lot lately. It helps me get through these stressful days!

Crustless Bacon and Cheese Quiche

Last night, I made Kraft's Recipe for Crustless Bacon and Cheese Quiche.


I haven't made this recipe in years! This is a recipe that I like to make on Sunday evenings, giving it a chance to cool in the fridge overnight. Between my husband and I, we will have a piece a quiche ready to be popped in the microwave for 15 seconds, each morning this week. It's a big time saver and a nice way to start the morning.

The recipe is pretty easy.

Crustless Bacon and Cheese Quiche

Serves 12
Nutrition per Serving: 180 calories; 13 fat; 2 carbs; 14 protein

Ingredients:

5 green onions, chopped, divided

1 tomato, chopped, divided

12 slices  OSCAR MAYER Bacon

1cup  sliced fresh mushrooms

12 eggs

1/3cup  BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream

1cup  KRAFT 2% Milk Shredded Cheddar Cheese

1cup  KRAFT 2% Milk Shredded Mozzarella Cheese

Directions:

 

HEAT oven to 325ºF.
RESERVE 2 Tbsp. each onions and tomatoes. Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Add mushrooms to reserved drippings; cook and stir 2 min. or until tender. Remove from heat. Crumble bacon. Add to skillet with remaining onions and tomatoes; mix well.
BEAT eggs and sour cream with whisk until well blended. Pour into greased 13x9-inch baking dish; top with bacon mixture and cheeses.
BAKE 30 min. or until center is set. Top with reserved onions and tomatoes. Let stand 5 min. before cutting to serve.

The only change that I make to the recipe is that I use turkey bacon, which would bring the calorie and fat count down slightly.

In planning ahead this week, I incorporated lunches and breakfast in to my weekly menu. I am going to make a quiche tonight for a quick breakfast that I can pop in the microwave for a few seconds in the mornings. By planning ahead and having breakfast readily available, I know this will help me stay away from the "office donuts" and give me less of an excuse to cave in to higher calorie options.



I have a grocery list organized according to the sections at our local grocery store. This helps save time when we are there. It also helps us to stay on track (i.e. avoiding the baked goods/treats). Speaking of staying on track, I did follow my meal and exercise plan for last week which is the second week in a row! I didn't lose any weight this past week, but no gain is still good! I know that if I wouldn't have had so many after-dinner trips to Dairy Queen with my husband last week, I would have at least lost a pound. Ice cream is so hard to say no to on a hot summer day, though. I'll do better this week!

My Bitter Sweet Break-Up

It's official; I sent the letter in the mail today. I am breaking up with my gym.

We've had some good times, don't get me wrong. I actually wrote the letter cancelling our gym membership yesterday but kept it in my purse until this morning. I almost didn't send it. I felt a sense of panic after I addressed the envelope and almost lost my nerve. I had a variety of thoughts running through my mind, such as, "Maybe we can work this out after all?" "I really did love going to the gym when we would go!" "What if by cancelling my gym membership, I stop exercising all-together?" "What if I completely regret cancelling our membership, just to go back and sign-up with new start-up fees?". With all of these thoughts running through my mind, I decided to sleep on it. This morning, when I put the letter in the mail to be delivered, I felt a sense of relief. It's over; after three years of ups and downs, I can finally move on.

You may wonder why I have decided to cancel our gym membership. Truth be told, we have only gone to the gym a handful of times this year and it just doesn't make sense to pay $50/month for something we use so infrequently. Could I have worked the gym in to my schedule more? Yes, I believe I could have. Did I feel guilty for not going to the gym? Yes, too guilty; it consumed me at times! Every time that I would go for a walk or a run outside, I would feel guilty. I would think "I should be doing this at the gym that we are paying for each month!" Sometimes the guilt of not using the gym would keep me from exercising all together. I decided that I don't need to pay for my own personal guilt trip any longer. I am finally getting rid of our "fat tax" (as my husband has called it these past few months - he was right). I can now exercising whenever I want outside without worry that I am wasting money. I feel more free.

Scones and Tea


I made blueberry scones to have for breakfast this week. They came out of the oven perfect, slightly brown on the bottom with crispy tops. I think that it was a mistake to store these scones in a tupperwear container. Just a couple days in a container and now they are all mushy. They are still tasty, but they have lost that great scone texture that they once had. If you have any suggestions on how to store scones, please let me know!


Scones and tea have been a nice way to start the day but I think that I may go back to an old, old favorite for next week. On Sunday evening, I plan on making a quiche. If I divide the quiche before taking the first piece, then I will have a better way to judge about how many calories each piece will be. About four years ago, I was really good about making big batches of food then dividing it throughout the week. I want to get back to that habit! It saved money, time and sometimes calories, too!

Red and Green Shrimp Supreme


String cheese mushrooms isn't the only recipe I can come up with on my own! Since I didn't go grocery shopping until last night, I had to be a little creative with our dinner on Monday. I had frozen shrimp and linguine. I saw that I had a leftover roma tomato and some spinach in the fridge. Here is what I came up with; a recipe named by my even more creative husband:

Kay's Red and Green Shrimp Supreme

Serves 2
Nutrition per serving: 484 calories; 46 carbs; 13 fat; 49 protein

Ingredients:

4 oz. Barilla Linguine
12 oz. Frozen Shrimp (small)
2 cups Fresh Spinach
1 Roma Tomato (diced)
1 tbsp. Extra Virgin Olive Oil
1/2 cup Shredded Mozzarella (part skim)
2 tsp. Garlic Salt
1 tbsp. Minced Garlic
Salt and Pepper to taste



Directions:

Cook shrimp with minced garlic and pasta as directed. Drain pasta and shrimp. Add spinach to shrimp pan, cover on low heat for a couple minutes or until spinach is mostly wilted. Stir frequently.

Add diced tomato to pasta, drizzle with olive oil and sprinkle with garlic salt. Add spinach and shrimp mixture to pasta. Toss with mozzarella cheese and serve.


Simple and delicious! New Recipe #17 of 25 was a success!

String Cheese Mushrooms

I came up with a new recipe this weekend. (Try not to laugh!)

New Recipe #16 of 25:

String Cheese Mushrooms

Serves 2
Nutrition per serving: 37 calories; 1.5 fat; 2.5 carbs; 5 protein

Ingredients

Sargento Light String Cheese
Six (6) Medium Mushrooms

Directions

I know that you don't have to be super creative to think of stuffing mushrooms with string cheese, but I came up with the idea the other night, tried it and felt like Paula Dean after realizing how much of a success it was! I cubed up one slice of string cheese to 6 medium sized mushrooms. I sprinkled garlic salt and italian seasoning on top and grilled them for about 10 minutes.

After work last night, I was really drained. I made dinner as soon as I got home and then my husband and I cleaned up the house a bit. I almost didn't workout, but then I remembered my big loss that I had just from following my exercise and meal plan last week. I don't expect a big loss like that again this week, but I know that I won't see anything but a gain if I don't keep up my momentum! So, even thought I was exhausted, I decided that I would go for a walk with my dog, Max. He hasn't really had any alone time without our new puppy, Topher, around. I called my mom and asked her to meet us for a walk at 8:00 p.m. This was a good idea since I know that I wouldn't have gone for a walk if there wasn't somebody counting on me to go. Max, for one, wouldn't have known if I decided to ditch him.

That brings me to walk #4 of 10 with Max as part of my 25 by 25 list! I know that I have taken Max for more than 10 walks this year, I just need to remember to blog about them!

Weekend Re-Cap:

Finally! A good loss! I am down 3 pounds from last week. I knew what I had to do to lose weight, I just had to do it. Blogging daily, following my exercise and meal plans; that's what it's all about! I stuck to my exercise and meal goals for the week and I was rewarded with a 3 pound loss!

I tried something new this past week. I am new to the wonderful world of Lara Bar's and I have only tried 4 diferent flavors, so far. I tried two new flavors this past week.  Here is what I have learned:

Peanut Butter Chocolate Chip is officially my new favorite flavor. Cookie Dough is runner up, followed by Pecan Pie. I am looking forward to trying the other flavors and will update my reviews on them when I do!

Fortune

Yesterday for lunch, I had chinese food. I split the lunch in half and ate some at lunch, and the rest as an afternoon snack. I always look forward to opening fortune cookies; I actually like reading the fortunes more than eating the cookie. Does anyone else try to find a way to apply the fortune they get to their own life? I always do that! I may just think too far in to things, though. Here is my fortune from yesterday's lunch:




So, it's not really a fortune in the sense of "you are about to become really rich", but it is a nice saying. I spent some time thinking about that fortune and decided that it did apply to me.

"Those who wish to sing, always find a song" can compare to "those who wish to change, always find a way". So, this fortune was for me, you see! I want to change, a lot. I want to lose 67 more pounds and live a healthy lifestyle as if it were a natural way of life for me.

This fortune doesn't just have to apply to the "big picture" either, I believe that it can apply in our daily lives, too. For example, "those who wish to workout, always find a way". This will be something I think about the next time that I feel as if my efforts to workout are being sabotaged. When I say sabotaged, that could mean something coming up at the last minute, or even just feeling too tired to try!

Vanilla Strawberry Banana Smoothies

First of all, I can't describe how lucky of a woman I am to be married to such an amazing guy. It's not just because he makes me strawberry banana smoothies for breakfast, all on his own, but that is a plus. He even made up the recipe for these awesome smoothies, below!

Nick's Vanilla Strawberry Banana Smoothies


Serves 2
Nutrition per serving: 205 calories; 40 carbs; 6 fat; 1 protein

Ingredients

1 med. banana
6 med. strawberries
1/2 cup International Delight French Vanilla Creamer
3 cups crushed ice

Directions

Add everything together in a blender and blend, baby, blend!

You better believe I am adding this to my list of new recipes tried as part of my 25 by 25 list! Only 10 more recipes to try before I can cross that item off of my list! By accomplishing all of these mini milestones in reaching my ultimate goal, it reminds me of one of my favorite quotes:

I Didn't Even Think Twice

Yesterday seemed like it lasted for an entire week. I had an appointment before work and a happy hour with co-workers after work. So far, I have maintained both my exercise and dinner plans that I established for this week; even despite eating out! As bad as it is, this kind of a streak hasn't happened in a couple of months! When I made up my dinner menu for the week, I forgot about the happy hour and dinner we had scheduled for last night. It just so happened that I scheduled steak salad for Wednesday's dinner, so that is what I ordered when we went out to eat.

Even though I was exhausted by the time I finally got home, I didn't even think twice before immediately changing in to some workout clothes and hopping on my bicycle. It was a gorgeous summer evening, so my husband and I went for ride. We called his dad after we began riding, to see if he wanted to meet us along the way, and he did!

We bought my father-in-law a bike for his birthday/father's day gift this year. He seems to love riding, and has been building up his endurance more and more each time he rides! We are both proud of him. It was nice for us to spend a little time with him, last night. He lives alone and doesn't work. His only company is his new kitten, so we try to remind ourselves to visit him/spend time with him as much as we can. My father-in-law doesn't have much, so he was ecstatic when we surprised him with this bike. He actually told us that he had never owned a bicycle in his entire life!

I'm Not on a Diet!

Do you know why I love not being on a diet? Chocolate chocolate chip muffins.

I had one yesterday. I split it in half and had some for breakfast and some as a dessert at lunch. I have lost over 30 pounds in a little over a year because I eat chocolate chocolate chip muffins.

Okay, okay... you caught me. I'm not telling the full truth, here. It's not just because of the chocolate chocolate chip muffins. There was some ice cream, too.

You may wonder, how can this be? Or you may think, this isn't possible! However, living a healthy lifestyle for me really does include chocolate chocolate chip muffins and ice cream from time to time. It also includes moderation, exercise and the good-for-you stuff, too. A little bit of everything, really! The one thing I am firmly against is deprivation. For me, anyways, deprivation leads to resentment and binges. It's just not healthy!

So, if you are struggling with a diet, stop! There is another way, people. My favorite website that I use as a guide in my healthy lifestyle is www.sparkpeople.com. There, you will find out how to ditch the diet mentality once and for all!

A Good Nap

Never underestimate the value of a good nap. After eating a chicken salad for dinner last night, my husband and I relaxed in the living room. I asked him to set his phone alarm for 15 minutes, grabbed a light quilt and took a little nap. It was amazing! I haven't taken a nap in I don't know how long! It completely changed my evening. When I woke up, I felt energized; I felt like life had slowed down. I felt refreshed.

15 minutes of napping gave me my night back. Instead of staying on the couch, I wanted to go out and do something with the nice evening we were given! We went for a motorcycle ride and my husband surprised me by taking us down to the lake.

We searched for beach glass as the sunset. It was an awesome summer night! Searching for beach glass this year was another item on my 25 by 25 list that I can cross off. After spending that time with my husband last night, I remember why I made that item a part of my list to begin with. We had a lot of fun!









After the beach, we stopped by my moms house to visit my little brother. I jumped on the trampoline with him and we had a nice visit!

The only thing that I regret not doing last night is exercise. I need to go 5 miles through exercise this week as a part of a challenge.

Tonight my husband and I plan on working out. We aren't sure if it will be outside at the track or in the gym. We are throwing around the idea of canceling our gym memberships. That would save us $50/month. My only fear is that I would use not having a gym membership as an excuse not to exercise. In essence, using the weather as an excuse to miss a workout.

My mom made a good point when I talked to her about this last night. She said to just exercise when the sun is down, when it is less hot. We also have a gym at the high school nearby for community members during the school year for free! There are free alternatives which I think would help me deal with the guilt I feel when I pay for what my husband calls our "fat tax" every month (i.e. The gym membership we rarely use).

Weekend Re-cap:

This weekend was a lot of fun! My husband and I visited friends in Pittsburgh. While we were in Pittsburgh, we ate a new restaurant.


Rock Bottom Restaurant and Brewery was a really nice place to eat! I tried their salmon salad with parmesan cheese. Both the salad and the salmon were very fresh! I was impressed with the food and the atmosphere. It was a nice place to catch up with some good old friends. By going there I was able to cross off number 24 on my 25 by 25 list.

I have 16 more items to work on for my 25 by 25 list to be complete. I am 5 months in to that challenge and I feel like I will be able to accomplish the rest of my list by the time February rolls around. Having an ongoing challenge like that definitely helps keep me motivated all year around.

Another challenge that I am apart of, as I mentioned in my last post, is the Summer Roadtrip Challenge. I feel like a mad women with all of these challenges going on at once. The Summer Roadtrip Challenge is broken up in to three parts and the challenges change weekly:

Part 1 - Non-Fitness Challenge: Answer the 5 questions, below.
1. How long have you known you had PCOS? Since 2006

2. What kind of doctor/doctors do you see for your PCOS? OB/GYN

3. What medicines are you on for your PCOS? None currently

4. What changes, if any, have you made to your diet or exercise because of PCOS? Increased exercise; tracking nutrition with Sparkpeople

5. How has your diagnosis affected you? Gaining 30 pounds in 3 months lead to me searching for answers. In knowing that I have a disorder that affects my weight, it has given me all the more reason to work at keeping this problem under control as best as I can! I am not "normal". Losing and maintaining weight loss will always be a challenge. Knowing this in advance helps curb my frustrations toward a "stubborn scale".

Part 2 - Fitness Challenge: Track and go 5 miles through exercise this week. (I can do it!)

Part 3 - Food Challenge: Eat 1 fruit and 1 veggie a day/post a fruit or veggie recipe. (I posted my recipe for parsnip fries! That can be found in my recipes tab, above.)

Keeping track of all of my different challenges is, well... challenging! The Summer Roadtrip challenge is only for the month of July, though. Then, my Big Bridesmaid challenge is ending on August 11th. This month is a really important month to see results! Time to get refocused!

Forcing Myself Out of a Funk

I have been in a horrible funk these past few days. I am deciding to force myself out of the funk because I refuse to be held back any longer!


I have joined a challenge for the month of July called the Summer Roadtrip Challenge. This challenge originated in the PCOS and Losing Weight team on Sparkpeople.com. It is called the Summer Roadtrip Challenge because at the end of the challenge, we will add up all of our fitness miles to see how far of a roadtrip we can take with our miles combined! This challenge is broken up in to three parts:

Part 1 - Non-fitness challenge.  

Part 2 – Fitness Challenge.

Part 3 - Food Challenge.

> For the non-fitness challenge this week, we were asked to set some goals. We were given 5 questions. These were my answers:

Question 1: What is one fitness related goal you hope to reach by the end of this challenge?
Answer: I would like to have “traveled” 20 miles by the end of this challenge.

Question 2: What is one nutrition goal you have set for yourself for this challenge?
Answer: Starting today, I would like to limit dining out to once a week during this challenge.

Question 3: What is one personal goal you set for yourself?My personal goal is to blog at least 5 times a week for the remainder of this challenge.

Question 4: What are you going to use (if anything) to reward yourself if you meet your goals?
Answer: I will reward myself with something small of my choosing once I have accomplished my goals.

Question 5: What motivational picture will you use during this challenge?
Answer: My motivational picture is actually a quote, “If we do what we have always done, we will stay the way we always have been.”

> For the fitness challenge this week, we were asked to complete at least 1 mile this week. I haven’t done this yet, but I have until July 7th to get my mile in. I am declaring right now, that my personal goal is to do more than 1 mile!

> For the food challenge this week, we were asked to try one new recipe this week, incorporating a fruit or vegetable. I haven’t done this yet, but I plan to try something new by the end of this challenge week!

I am hoping that this new challenge will be just what I need to help get me out of my funk. It’s always refreshing to have new goals to strive for! Don’t worry though; I am still keeping my Big Bridesmaid Challenge in mind. I’ve got 5 more weeks to go with that challenge before my friend’s wedding on August 11th!

I will first start by saying that I tried the chocolate chip cookie dough lara bar this past week, and it was amazing! My husband tried the pecan pie bar and that was pretty yummy, too! Who knew larabar's were so delicious and nutritious? Okay, the rhyming ends here. ;)

So far, summer has been a hard time for me to lose weight! Although I have been so much more active, I have been eating out with my husband and friends a lot more this time of year. On Saturday, my husband and I showed my younger sister the bike trail that we found last weekend. We rode another 10 miles on our bikes. It was so much fun! We burned a lot of calories but then we consumed twice as much for dinner afterwards. If it wasn't for all of my activity this summer, I know I would have easily gained more than I have lost so far in this challenge!

I'm thankful for another week! Another fresh start! I may have gained 2 pounds since last week, but I'm not giving up. I am pressing on!
