Easy Vanilla Buttercream Frosting

I hope that you all had a great Valentine's Day!

Last night, I made my first ever homemade frosting for red velvet cupcakes. I used the recipe from Taste of Home. This is the first new recipe I have tried as part of my goal to try 26 new recipes before I turn 26 next February.

Recipe # 1 of 26: Easy Vanilla Buttercream Frosting

1/2 cup butter, softened
4-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
5 tablespoons skim milk

In a large bowl, cream butter until light and fluffy. Beat in the confectioners' sugar, vanilla and enough milk to achieve desired consistency.

I had no idea how easy it was to make frosting! This batch turned out really good and I am looking forward to trying recipes for other kinds of frosting in the future.
