Easy without Losing the Healthy

In only one week from today, our brand new treadmill should be ready for us to pick up, bring home and set-up! I can’t wait!

Our treadmill (that sounds so awesome, “our treadmill!”) will be here just one month before I run my second 5K race. I’m looking forward to training on my very own treadmill. I think we will become great friends, this new treadmill and I!

Treadmill training isn’t going to be the only training I will do for my 5K. Like I’ve said before, running outside and running on a treadmill are two completely different beasts. It doesn’t matter how flat the terrain, running outside is just plain HARDER!

Since my 5K is only 46 days from today, and I can’t even run a mile straight without having to walk, I have a lot of work to do. I plan on walking, jogging, running, hopping, skipping and/or dancing my way to the finish line. Doesn’t matter how I get there, just as long as I try! My ultimate goal for the 5K next month is to finish sub 51 minutes (beating my time from my first 5K last year). If that doesn’t happen, my alternative goal is to finish sub 60 minutes. If that doesn’t happen, then my goal is to just plain finish!

This week, I am going to be working on building up my endurance on the treadmill at the gym.

Monday - Rest
Tuesday - Gym (30 min.)
Wednesday - Wii Fit Yoga
Thursday - Gym (30 min.)
Friday - Wii Fit Yoga

Dinner Plan is as follows:

Monday - Chicken Quesadilla
Tuesday - Fish w/ side salad and green beans
Wednesday - Quesadilla
Thursday - Quesadilla
Friday - Fish w/ side salad and zucchini


Last night, I made some awesome pretty awesome quesadillas, if you ask me! I used our George Foreman grill and it worked great! You can call me the quesadilla queen. I made a big batch of quesadillas, 10 individual bags of quesadillas to be exact. They are in the freezer so we can quickly grab a quesadilla to go for lunch or heat one up for a quick easy weeknight dinner!

My chicken and cheese quesadilla is really easy, you just need:

3 oz. chopped cooked chicken
1/4 cup shredded cheddar cheese
1 - 10 inch. gran sazon tortilla

...400 calories later and you're full! Just as easy as that!


Tonight for dinner, we made fish with a side salad and green beans according to plan. The green beans were from a Crunchtables box, and they were awesome! I think we're on to something with these Crunchtables. It's a quick, easy side; just what I need right now, with work being so busy! The fish was easy, too. It came individually frozen, so this morning I took out two individual bags of fish from the freezer, put it in the fridge on a paper towel and off to work I went. Easy without losing the healthy!
