The April 5K Challenge

It's been quite a while since I've given myself an "official" challenge. I think my last challenge was in August, last year. Now, don't get me wrong, I challenge myself often, but there is something different about having a challenge set up here, for you all to see.

A reader recently shared that they enjoyed reading about my challenges in the past, so I am happy to share my new challenge, which started yesterday!


The April 5K Challenge

The Goals:

- Get down to 220's
- Develop and abide by meal plans
- Develop and abide by exercise plans

The Deadline:

- April 27, 2013 (Law Day 5K)

The Terms and Conditions:

- Weigh-in's will be every Sunday morning
- Dinner plans are to be posted for each week
- Exercise plans are to be posted for each week

Sunday - "Breakfast for dinner" (done!)
Monday - Chicken Quesadilla
Tuesday - Steak with Corn and Salad
Wednesday - Grilled Fish with Yams and Green Beans
Thursday - Baked Fish with Corn and Salad
Friday - Grilled Chicken Salad
Saturday - Cheeseburger with Sweet Potato Fries and Salad

Exercise Plan for this week:

Sunday - Treadmill - 5K (done!)
Monday - Rest
Tuesday - Treadmill - 1 mile speed work
Wednesday - Treadmill - 30 minutes, any pace
Thursday - Rest
Friday - Treadmill - 1 mile speed work
Saturday - Rest

I am so excited for this new challenge! I feel like it's just what I need to break my plateau of being stuck in the 230's. Also, it should be a great way for me to stay on track with 5K training. I plan on completing one 5K a week until the big race in April!

Yesterday I completed by 5K and had breakfast for dinner. Speaking of breakfast, we made breakfast burritos for breakfast Saturday morning. We used the George Foreman grill and they were so good!

Question: Have you ever had "breakfast for dinner"? What do you usually make when having breakfast for dinner?
- My husband loves pancakes, bacon and eggs for any meal. I had cereal for dinner last night... two bowls.


  1. I love challenges. I had a month long motivation challenge planned for March but things happened where I had to cancel it. It was little challenges each day people had to complete for an enrty into a giveaway to help keep them motivated all month long. I am really thinking about starting it for the month of April.

  2. I have eggs and toast when I make pancakes for my family. That burrito looks yummy!

  3. Did breakfast for dinner tonight. I like to make things that the leftovers can be eaten at later breakfasts, like french toast or pancakes. Both can be put in the refrigerator and then put in a toaster when one wants one. Tonight we had corned beef hash (the left over corned beef from St. Patrick's day), homemade sourdough english muffins, apple pancakes and I put out some orange and some grapes. Left over is english muffins and apple pancakes. Yummy.
