Easy and Delicious Lemon-Yogurt Sauce

How does Pasta with Zucchini, Tomatoes and Creamy Lemon-Yogurt Sauce sound to you? If you answered "good" "great" "refreshing" and/or "fantastic", then I've got something GREAT to share with you!

If you were paying close attention to my June Challenge Results, then you would have seen that I made three new recipes in the month of June but only blogged about two of them. This, my friends, is the fabulous third recipe we tried last month!

Pasta with Zucchini, Tomatoes and Creamy Lemon-Yogurt Sauce

I made a few tweaks and it turned out great!


8 ounces spaghetti
6 oz. plain greek yogurt
1/4 cup grated parmesan and romano
1 teaspoon lemon zest
1 tbsp olive oil
2 medium zucchini, sliced
2 tbsp minced garlic
1/2 pint grape tomatoes, halved lengthwise
fresh grated salt and pepper to taste


Cook pasta as directed.

In a large bowl, stir together the yogurt, parmesan and romano, lemon zest, salt and pepper.

In a large skillet, heat the olive oil with medium heat. Add zucchini cooking them until they are wilted but not too soft, flipping them occasionally. Add garlic, cook for an additional couple of minutes. Stir in tomatoes, cover skillet and cook until tomatoes are somewhat soft.

Combine all in a large pan, serve and enjoy!
