Homemade Spaghetti and Meatballs

This week I made another new recipe as part of my April Challenge!

Homemade Spaghetti and Meatballs




My mother-in-law gifted my husband and I with a noodle attachment for our KitchenAid Mixer for Christmas this past year. My husband had been wanting this attachment for quite some time but I honestly didn't see the need. I didn't think we would have the time to make our own noodles with a newborn in the house. I thought this gift was going to just sit in our cupboard this year and collect dust. Well, I am now eating my words. Literally. Homemade noodles actually don't take that much time and they are just so good! I really don't ever want to go back to boxed noodles. Nothing beats fresh!






I really love being a stay at home mom. I can make homemade pasta any day of the week! I am thinking that if I were working, homemade pasta would be reserved for the weekends. I don't think I would want to spend too much time making dinner on a week night after not seeing Piper all day long. I am so blessed to spend every day with my little girl. Bonus: homemade pasta any day of the week!

Ingredients for pasta:

1 cup flour
1/2 tsp. garlic salt
1 egg
2 tbsp. water
(a little extra flour will also be needed)

Directions for pasta:

Mix flour and salt. Add slightly beaten egg. Mix into dough with hands (your best tools). Add water as needed. Mix until dough is formed.

Use the pasta attachments for your KitchenAid mixer to roll out the dough and cut into spaghetti noodles. As far as rolling the dough with the attachment, I use size 4 for the end result. (Or, if you don't have the attachments, roll the dough and cut it yourself. I'm sure the pasta would be thicker if you cut the dough yourself, but it will be just as good, I promise!) Use extra flour as needed throughout this process.






Once your noodles are cut, drop pasta into boiling water and cook until al dente.

Now it's time for the meatballs.




Ingredients for meatballs:

1.25 lbs. ground beef
2 slices Italian bread, toasted and chopped
1/2 onion, chopped
1 egg
1 tbsp. worcestershire
1 tsp. Italian seasoning
1/2 cup grated parmesean
Pasta sauce of your choice
salt
pepper




Directions:

Mix together all ingredients with the exception of pasta sauce and form golf ball size meatballs. Spoon about a cup or two of pasta sauce into the bottom of a baking dish. Set meatballs in sauce. Cover and bake for 60 minutes.





If desired, serve immediately. If you like your meatballs with a crispy exterior, proceed with pan frying until the outside is browned well.






Coat pasta with any unused sauce. Serve and enjoy!
