Please don't let my lazy iPhone pictures of this meal turn you off from giving it a try. These Cheeseburger Biscuit Cups absolutely rocked our world; even more so since they just happen to be toddler-approved.
Our 15-month old loved these Mini Cheeseburgers (as I so lovingly like to call them). They were so simple to make and they were fun to eat, too.
Cheeseburger Biscuit Cups
(recipe made up from a picture I saw)
Only about 80 calories per cup!
1/2 lb. lean ground beef
1 can of biscuits (such as Pillsbury)
(any other toppings you'd like such as relish, chopped onions, etc.)
Preheat oven to 400 degrees. Cook and drain ground beef in skillet, season with salt and pepper.
Spray muffin tin with cooking spray. Pull each raw biscuit in half, stuff each half into their own muffin mold. Continue until all biscuits are used up.
Press a spoonful of cooked ground beef into each biscuit. Cook in oven for about 10 - 12 minutes, or until biscuits are looking brown on the edges. Top with cheese and whatever other toppings you desire. Serve as appetizer or as a meal on a bed of lettuce.
This is one recipe I'll be going back to over and over, again!
