Never Too Late to Post the Meal Plan

I'm kind of doing things a little backwards here. The week is almost over and I'm finally ready to share with you my meal plan for the week -- haha. It's never too late to post the meal plan for the week, right? I had the plan written out all the way back on Saturday, right before I went grocery shopping with my girl P, but I just didn't find the opportunity to post it until today.

So, here's the plan for the week that's almost over; week one of my 30 by 30 challenge:

Sunday - Zuppa Toscana with Caibatta Roll
Monday - Fish with Fresh Vegetable Medley
Tuesday - Spaghetti Squash + Meatballs with Brussels Sprouts
Wednesday - Kielbasa Sausage Stir Fry with Bell Peppers + Onions
Thursday - Fish with Asparagus + Rice
Friday - Naan Pizzas

I didn't make an exercise plan for this first week of the challenge, as I wanted to focus on getting my eating habits back in order first. I have been trying and mostly succeeding at getting all of my 120 ounces of water in each day, so far. And, I am doing well at tracking all of my calories. As Piper would say, "hooray!"

I am feeling really good and it's only been four days back on track. Going to church last Sunday really helped boost my spirits and I'm so looking forward to going back on Sunday! Until then, we are going to be busy working on craft show prep for a show we're participating in this Saturday.
