Piper shared her croup with me. So far, this illness has manifested into a sore throat, headache, body aches and chills. Oh what fun!
Since I was down and out last night, I wanted nothing more than that delicious gnocchi soup from Olive Garden but, I've got goals this month and eating out is not going to help me reach them. So, I decided to try a new soup recipe at home instead; a copycat version of Olive Garden's Chicken Gnocchi Soup.
I had most of the ingredients on hand but, I still had to run out for the rotisserie chicken. It was worth the trip to the grocery store. Oh my goodness did this turn out perfectly.
I have a feeling that this chicken gnocchi soup is going to be a new staple in our house this winter.

Ingredients:

tablespoons butter

cloves garlic, finely chopped
1/2 small yellow onion, very finely chopped

package (17.6 oz) gnocchi

carton (32 oz) Chicken Broth
3/4-1 lb cooked rotisserie chicken, chopped

tablespoons flour
2/3
cup half and half
2
cups fresh baby spinach
Salt and pepper
Directions:
Melt butter in a large pot over medium-high heat. Add garlic and onion and sauté until fragrant, about 1 minute.
Add gnocchi, broth and chicken to pot. Bring to a boil and cook until gnocchi are tender, about 3 minutes.
Whisk flour into half and half. Add to pot, stirring just until pot comes to a boil again.

Turn off heat. Stir in raw spinach leaves (the heat from the soup will wilt them slightly). Salt and pepper to taste, and serve.

I hadn't tried a recipe from tablespoon.com before but, since this one was such a hit in our house, I'm going to go back and give that site another try during my next recipe search!
