Spaghetti Squash Enchilada Bowls

Hey guys! I tried a new recipe this weekend and it turned out great so, I figured I'd share it with you all today.

I followed the original recipe for the most part except, I used canned enchilada sauce and added shredded rotisserie chicken. I also only used one large spaghetti squash instead of two small ones, as well. 

It all turned out much better than I could have imagined. It was an interesting mix and a welcomed change from our regular "spaghetti squash and meatballs". I am liking all of the variety there is to cooking with spaghetti squash. I am looking forward to trying some more different ways, soon.

Spaghetti squash is so light and filling and, it seems to be in season right now. So, we are going to be using spaghetti squash weekly 'round here for a while.

  1. That looks tasty, I guess I'll ask my wife if she can make these as I'm a huge fan of Spaghetti. But it all depends if she is in a good mood or not haha.
