Yesterday, I tried a new recipe as a part of my 25 by 25 list.

Recipe 11 of 25:
Lifesaving Lentil Soup
Serves 6 - 2 cups each
Nutrition per serving: 226 calories, .1 fat, 39 carbohydrates, 17 protein
Ingredients
1 onion, finely diced
1 - 14.5 ounce can diced tomatoes, juice included
1 - 6 ounce can tomato paste
1/2 cup diced celery
2 cups diced carrots
1 cup bag brown lentils
1 tbsp oregano
1 tbsp basil
1 tsp red pepper flakes
5 cups of water
salt to taste
Directions
1. Place the onion, tomatoes, tomato paste, celery, carrots, lentils, and seasoning in the slow cooker. Add 5 cups of water.
2. Set the cooker on low and slow cook for 4 hours.
Recipe is a modified version of the lifesaving lentil soup recipe from the Sparkpeople cookbook. If I could do it all over again, I probably wouldn't have used the full bag of lentils. If I make the recipe again, I will definitely follow the original recipe!
I bought some lentils a few weeks ago and have been looking for a good recipe for them. This looks yummy, and only 226 calories for 2 cups is great! THanks for posting! What did you think of the soup, was it good?
