Chicken and Black Beans over Rice

Happy Birthday to my husband and Happy Monday to you all!

Today, my husband turns 26. If you're a frequent follower to my blog, you already know just how awesome he is. I can always count on him to make me smile (Exhibit A: photo above. Yes, he is dressed in costume. And yes, he likes to keep the mullet wig in the trunk of our car just in case there will be an opportunity to wear it). I am so happy to have spent another year with this guy, and I look forward to a gazillion more (because anything less just wouldn't be fair).

Yesterday, my husband and I spent the day "spring cleaning". Now, I know, it's not spring. But it felt good to clean and organize some places that have been neglected since last spring. Maybe since we started spring cleaning, spring will come a little quicker? No? Oh well, it was worth a try.

Throughout the day yesterday, I also got my grocery shopping done and meal plans figured out for the week. I must say, I am so looking forward to posting weekly meal plans again. That is definitely going to be a goal of mine for January.

Sunday - Chicken and Black Beans over Rice
Monday - Nick's Birthday Dinner
Tuesday - New Years Eve Party
Wednesday - Pork and Sauerkraut with Potatoes
Thursday - Lemon Baked Salmon with Salad
Friday - Flatbread (onion and pepper) Pizzas with Salad
Saturday - Slow Cooker Vegetable and Wild Rice Soup

Last night's dinner was tasty.

The Chicken and Black Bean recipe I found is very similar to the Easy White Chicken Chili recipe that I use. Bonus: the Chicken and Black Bean recipe uses the slow cooker! This meal is really simple to make:

Chicken and Black Beans over Rice

Serves: 6
Nutrition per serving: 360 calories; 25 carbs; 12 fat; 34 protein
(rice not included in nutrition calculations)


1 1/2 lb. chicken - boneless, skinless
15 oz. can black beans
15 oz. can whole corn
15 oz. jar medium salsa
8 oz. cream cheese - 1/3 fat
cooked rice


Add chicken, beans, corn and salsa to slow cooker. Cook on high for 2 hours.

Add cream cheese, continue cooking for 30 minutes.


Cook rice as directed. Scoop rice onto plate, top with scoop of chicken and black bean mixture. Serve while hot.

Tonight, my husband and I are celebrating his birthday by going to a local Italian restaurant for dinner. He's excited to have their Veal Parmesan. I'm not sure what I'll order, but I usually enjoy their steak salads or Italian wedge.
