Easy Chicken Fajitas

If you're new to my blog, let me tell you that food is probably my favorite topic to discuss; and last night's dinner is definitely something to talk about.

I have been trying to change things up a bit this week. On Monday, I made Coconut Curry with Chicken. Last night, I made Chicken Fajitas!

There are many different ways you can make Chicken Fajitas, and they're all fairly easy.

Last night, my husband and I decided to use fresh green peppers, red peppers and red onions as the vegetables in our yummy fajitas. (Cook vegetables in skillet with a tbsp. of olive oil until vegetables are to your softness liking. Add a sprinkle of garlic salt and pepper.)

We used a packet of taco seasoning to give the chicken some flavor. (Cook chicken, then shred or chop. Season as you wish.)

We chose to use corn tortillas (heat in microwave for 10-12 seconds) and a sprinkle of shredded colby jack cheese to top it all off.

Chicken Fajitas. Simple, tasty and satisfying.
