Five Weeknight Meals Five Ingredients or Less

One thing that keeps me on track with living healthier (and eating out less often) is to plan ahead some quick and easy homemade meals to make throughout my busy week. This week, I'm planning on making Five weeknight meals with Five ingredients or less. 

  • 12 oz. Italian chicken sausage, al fresco brand
  • 2 large zucchini
  • 1 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 small onion
Tuesday: Italian Marinated Chicken over Rice with a side of Broccoli
  • 1 cup Italian dressing
  • 1 lb. Chicken tenderloins
  • Rice
  • Broccoli
Wednesday: Classic Grilled Cheese and Tomato Soup
  • Bread
  • Cheese
  • Tomato Soup
Thursday: Garlic Brown Sugar Chicken over Noodles
  • Brown Sugar, 4 tsp
  • Chicken breast, no skin, 12 ounces
  • Minced garlic, 1 clove
  • Butter, salter, 2 tbsp
  • Salt and pepper to taste
  • Pre-made pizza dough, store bought or homemade
  • Cheese
  • Toppings of your choice
Yesterday, I made Mindy's Turkey Chili for dinner and I'm using the leftovers for lunches this week. I love to make a big meal on Sundays, to last throughout the week. It makes packing lunch a breeze in the mornings!

After dinner, I made another batch of Homemade Granola Bars, only this time I used dried banana chips instead of cranberries. Same fresh taste and healthy, too!
