Nick's Pasta Salad

Hey everyone! How has August been treating you? I've been doing a pretty good job at keeping track of my August goals and I'm happy with the results, so far!

GOAL # 1: Drink 120 ounces of water a day.

Definitely happening!

Last week, I got in a lot of exercise and a lot of water! That, in itself, makes it easier to be a more positive person. When I do good, I feel good. Simple as that!

After doing the Color Run on Saturday, my husband and I used Sunday as a rest day. Our rest day actually included a lot of cleaning but it's the kind of cleaning that makes the rest of the day relaxing. Starting the week off with fresh sheets, fresh floors and fresh dogs is a good thing!

After cleaning the house, we went out to dinner, then we went grocery shopping. We have a bunch of $10 off coupons to a local restaurant, so going out to dinner before we go grocery shopping for the week has been our latest Sunday tradition.

After grocery shopping, we took my little brother out to get ice cream. We figured that's also a good way to start out the week; with a Sunday night ice cream trip. When we were finished with that, I tried a new recipe. I know it may be hard to believe, but I made pasta salad for the first time ever, last night. I feel like I might be the last person on earth to learn how to make pasta salad. It seems like such a staple recipe, and I don't know what took me so long to give it a try.

My husband works a job where he doesn't have access to a microwave and he's getting really tired of packing sandwiches for lunch. We've exhausted just about all of the sandwiches possibilities known to man, so now we are on to something new; pasta salad made specifically for his taste!

Nick's Pasta Salad


1 box Farfalle pasta
8 ounce block of mozzarella, cubed
1/2 lb. cubed ham
Pepperoni, sliced in quarters, about a handful
1 jar black olives
1 jar green olives
Wishbone House Italian Dressing, 1/2 bottle


Cook pasta as directed. Drain and let cool.
Combine cubed meats and cheese in a large bowl, add olives and pasta.
Add 1 cup dressing to pasta mixture. Toss until coated well. Refrigerate for at least an hour before serving.
