Sausage and Onion Stuffed Zucchini Boats

If you're like me, and your garden is producing a mass amount of zucchini right now, then you'll really enjoy this adaptation of the recipe from Skinnytaste that I'm about to share with you!

Sausage and Onion Stuffed Zucchini Boats


1 1/4 cups pizza sauce
2 large zucchini
1/2 small red onion, finely diced
1 jalapeno, diced, seeds removed (optional)
12 oz. lean italian sausage, removed from casing (al fresco), browned
1/2 cup part skim shredded mozzarella cheese
Garlic salt and pepper, a sprinkle of each


Slice zucchini lengthwise, use an ice cream scoop or spoon to shape into boats.

Add sauce and diced onions to boats, reserving about 1/4 cup of sauce for later. Season with garlic salt and pepper.

Add browned sausage to boats with diced jalapenos (optional).

Add remaining sauce, sprinkle with cheese, cover and bake at 400 degrees for 35 minutes.

Let stand for 5 minutes, then enjoy!
