Corned Beef Omelet with Thunderjack Cheese

It's Friday already?! Alright!

I am almost fully through the first week of my Big Bridesmaid Challenge (Part II) and I have to say, this new challenge has given me the motivation I needed to stay focused (and refocus on my goals when I would start to get off track).

Another thing that has helped me stay focused this week has been going back to daily blogging. Even if I don't have much to say (like today) I am still going to check in because the accountability aspect of blogging just works for me!

Unfortunately, on Wednesday, I started to get a sore throat, headache and all that jazz. I only worked out once because of it but, I still feel like this week was a success in other ways. Since mom's don't get sick days, it just wasn't worth it to me to use my energy for anything other than trying to feel better these past couple days. Hopefully I will be back to full health by the end of the weekend so I can stay more on track with my exercise goals next week!

Even though I don't have much to say today, I do have one thing that I have to mention. This week, I made the most amazing omelet I have ever made, hands down. I'm not a big breakfast eater so, when I find something that I really enjoy, I just need to share it.

This omelet was packed with thinly sliced corned beef and thunderjack cheese (similar to colby jack cheese). My, oh my, was it amazing! I used 2 large eggs and 2 large egg whites. The omelet was filling and came out to about 360 calories.

If it makes me look forward to eating breakfast (my least favorite meal) then it's definitely a winner!
