A Scattered Brain Update

Happy Thursday! If this post sounds fast-paced and all over the place that would be because that's pretty much where I'm at right now. I feel a little scattered brain lately! I have so much to say but, I don't have a lot of time to say it. I will say one thing though, I sure am looking forward to the weekend so I can slow down a bit and unplug.

So, here's the gist of what's going on in my world lately.

1. My best friend just had her first baby. His name is Leo and he's absolutely adorable. I'm smitten.

3. Tomorrow is Good Friday. We'll be attending a church service tomorrow night and, again on Sunday morning. I am so looking forward to both services and, celebrating all that this holiday truly means.

4. This is the last you'll hear from me until Monday {unless you're in the auction group!} as my husband is off of work tomorrow and I'll be spending the weekend with my family!

Plus Size Clothing Auction

Happy Tuesday! I have something fun to share with you today!

Recently, I decided that I would host a plus size clothing auction on Facebook! I need to make some room in my closet and I don't want to wait until yard sale season to do it. Plus, there's still snow on the ground so, it's going to be a while until I can have a yard sale here!

Hunkered Down at Panera

Whew. I almost didn't get the chance to write today but, here I am!

My sweet Piper came down with croup over the weekend and so, it's been all hands on deck. Despite having a rough weekend, I still tried to prep us for a good week ahead. If you follow my new Instagram account, you might have seen my Insta-stories from Sunday when I was trying to get us all set up by making a meal plan, grocery shopping and meal prepping.

Monday has been a little rocky already but, at least we have a meal plan, a stocked fridge and of course, each other. Aw. I guess I get a little sappy when I'm sleep deprived.

My husband is actually home from work today. None of us are feeling 100% but, with him being home, I am taking advantage of some time away to finish up working on my taxes for our business, Anything Rustic. Our appointment is on Wednesday and I hope to get all of my final numbers done this afternoon. 

I'm hunkered down at a Panera Bread about to get started working now. I hope you all have a great Monday!

Weekly Weigh-in #4 - March 2018

TGIF, friends. TGIF!

Piper has been down with somewhat of a cold most of the week and, I think I've been fighting the same thing. It hasn't taken me down though so, I'm happy 'bout that.

Recently, I've been creating a lot of content for my YouTube channel. I have been feeling it a lot lately and just going with it so, here's my most recent video with my weigh-in from yesterday.

I plan on making a another "What I Eat To Lose Weight" video with one of my favorite splurge meals included so, keep an eye out for that video sometime next week, possibly!

As for our plans this weekend, we are having some family over tonight to color Easter eggs followed by an Easter egg hunt on Saturday! I went out yesterday and bought way too many decorations to celebrate Easter and the arrival of Spring but, there are no regrets! I'm ready to celebrate!

What I Eat To Lose Weight #1

I've decided that once every week or so {or once a month - let's be honest} I will film a full day of everything I eat. I hope that by doing this it will help keep me accountable as well as give you all some ideas of what I eat in a day to lose weight!

Here's the breakdown of what I ate on Monday:

Breakfast: Oatmeal + Coffee
Lunch: Tuna Sandwich
Snack: Apples + Cheese
Dinner: Baked Chicken + Mixed Veggies + Baked Fries
Snack: Dark Chocolate + Popcorn

 *Nutrition total: 1403 calories | 175 carb | 72 fat | 91 protein
{Not filmed: 120 oz. of water consumed for the day.}

This was a low-calorie, sedentary day for me as my current calorie range is suggested as 1570-1920, per I rarely eat this low on the calorie range but, I'm glad to have a low-calorie day to look back on for reference.

Disclosure: I am sharing this not as a guide for you, rather, to show you what I've been eating on my weight-loss journey. Please do not go by my calorie range, everyone is different. You can find yours for free online! I am not a dietitian or a doctor.

Weekend Recap: Maple Tour + Buffalo Farm

Hey guys! I'm back with another weekend recap for you all.


On Friday night, Piper went over to my mom's house for a couple hours while Nick worked on laying out the bathroom tile upstairs. 

We are still, very slowly, working on our renovation! It's been about two months since we started and we're making some decent progress. We aren't in any rush so, we've just kind of been working on things at our leisure. Much like weight-loss, a little bit of work goes a long way in the end -- you just have to be patient. 


We all slept in until about 8 a.m. then quickly decided to go to the gym. Piper's been asking to go to child watch at our gym all week, which really helps give me another reason to work out. I went to the gym a total of three times last week, all because Piper wanted to go play at child watch.

On Saturday morning, Nick and I worked out while Piper played in child watch. We both did some treadmill work and then showered before picking Piper up and heading out to eat for lunch.

We used a gift card to go out to eat at TGIFriday's. I had french onion soup and the Jack Daniel's chicken strips. Nick got a french dip sandwich and Piper got the mac n' cheese. We were all happy campers with a good lunch in our belly!

After lunch, we all went out to the grocery store to stock up for the week. We also grabbed some treats for company later on that night. 

Later on, we had our friends Steve and Mindy over to our house for dinner! We had rubens, baked potatoes and donuts for dessert. It was a pretty chill and relaxing night with our friends, who are expecting their first baby any time now! 

We couldn't be more excited for them! I am so glad we got some time to spend with them this weekend. 


Sunday morning was another sleep-in day for us. Ever since the time change, Piper has been sleeping in until about 8 a.m. every morning and we have been taking full advantage of that extra sleep time!

Nick made us all some breakfast while I sipped on some coffee. Piper played around the house for a bit before we all decided to go on our local Maple Tour.

While on the Maple Tour, we visited a museum where Piper learned about how maple syrup comes from trees. She was so interested in how it all worked! 

They had crafts for the kids to make and, her favorite part, taste testing!

At one of the stops, there is a buffalo farm. Piper got a kick out of seeing the buffalo root around. She tried calling them over to the fence but, they kept their distance.

After the Maple Tour, we stopped by Nick's grandma's house to visit and so he could fix her garage doors. Nick's grandma has the best views at her house. 

We visited for a short while before going shopping at Walmart for a new mop and then, coming home to finish the night all cozied up on the couch.

Weekly Weigh-In #3 - March 2018

Hey guys! Happy Monday.

I had to share that picture from the weekend because, it just cracks me up. Three-year-old's are kind of hilarious.

I am coming out of the weekend feeling bloated from eating too much salt and not drinking enough water. Today's goal, first and foremost, is to reach my water goal for the first time in days and days and days. I know that will help me get rid of the inflammation I'm feeling.

Last Thursday, I weighed in at 240.8 lbs. It wasn't much of a drop from the week prior but, regardless, I want to maintain that drop for this coming Thursday's weigh-in or, better yet, get even lower. 

As I mentioned in the beginning of the month, I am trying to focus more on my habits rather than the weight so, I don't have any specific weight-loss goal this month; just a goal to lose some sort of weight while living more often in my healthy habits.

Last week, I wasn't living in my healthy habits much at all. While I hit the gym 3 times last week, I wasn't drinking the amount of water I needed to stay hydrated, I was staying up way too late and, I wasn't keeping track of my calories daily. This week, I'm going to work on bringing all of those habits back to front and center of my focus.

Turkey Lasagna

Happy Friday, all!

My New Turkey Meatloaf Recipe - 2018

Every time I make meatloaf, it turns out drastically different. Mostly because I never go by a recipe and I always just throw the ingredients in without measuring. This time I still did most of that but, for once, I wrote down what I used to make this version.

I'm glad I did write it down because this is one of my new favorite versions of meatloaf!

Turkey Meatloaf:

1 lb. ground turkey
1-2 tbsp. bbq sauce
1-2 tbsp. catsup
3 slices white bread, chopped into little pieces
seasoned salt
1 egg


1/4 -1/2 cup catsup
6 tbsp. brown sugar


In a medium sized bowl, mix meatloaf ingredients together. Generously seasoning with seasoned salt and pepper. Transfer to baking pan. Bake at 375 degrees for 1 hour 10 minutes.

Halfway through baking, whisk the glaze together and drizzle on top of meatloaf, continue cooking until meatloaf is no longer pink in the middle.

Favorite Splurge Meal + Weekend Recap

Today I have a weekend recap for you but, before I get into that, I must say that last Thursday night, while Piper was at Nina's house, I had my all-time favorite splurge meal with my husband: sesame chicken with fried rice. My awesome husband even got us chocolate for dessert, too! Talk about an indulgence.

This meal is what reminded me once again that my weight-loss journey can't be an "all or nothing" journey; I don't have to deprive myself of the food I love to lose weight. I just have to moderate how often I splurge on these kind of meals.

Now, let's get to the rest of the weekend, shall we!


Our Friday was pretty chill. During the day, Piper made her great-grandma (Busha) a picture frame for her birthday.

In the evening, we went over to our Busha's house to celebrate her birthday with some cake. It was just a small group of us and it was really nice to spend some time there with Nick's side of the family.


Saturday morning started out wonderfully with a pedicure next to one of my best friends! My friend, Mindy, is having her first baby in a couple weeks and it was so nice that we got in a little girl time before the big day! I am so beyond excited for her!

In the afternoon, Piper ran around the house playing with her toys while Nick worked on the bathroom renovation upstairs. While Piper played with her toys, I worked next to her on some blog posts before starting dinner. I made turkey meatloaf (sharing the recipe for this meatloaf tomorrow!) and it turned out great!

Saturday evening, I dropped Piper and Nick off at the YMCA to go swimming while I got some grocery shopping done. I managed to grab a strawberry milkshake from Chick-Fil-A and got back to the Y just in time for the pool to close for the evening.

The swimming really tuckered Piper out! It was a great way to end the day.


On Sunday morning, Nick left the house early for sound check at church. He played guitar at church while Piper and I stayed home. I forgot to secure us a ride so, we missed out on service. Sometimes it's a pain to only have one vehicle.

On Sunday evening, we had Nick's mom and step-dad over for dinner. I made Turkey Lasagna for dinner (which I filmed the process and will be sharing on YouTube, soon!) and, I'll be working my way through the remainder of the leftovers during lunch today!

Healthier Habits as of Late

Happy Thursday, everyone! We are one day closer to Friday and boy, do I have something special coming up for you all on Friday! You'll definitely want to check out the bottom of this post before you leave.

One week ago, on March 1st, I recommitted to living a healthier lifestyle. I said that I wanted to "watch my habits more than my weight" and, so far, so good.

Some of my healthier habits lately include:
Drinking more water
Going to bed earlier
Getting out to the gym
Treating each meal as a fresh start
Eating within calories more often than not
Seeking out inspirational content keep me motivated
I definitely still have so much to improve on but, it was a good first week back at it. Watching my habits did help me lose a little bit of weight. I'll share the official results with you as soon as I film and share my weekly weigh-in video on YouTube.

Now that I'm focusing on living a healthier lifestyle again, you may wonder, will I fail? The answer is irrevocably "YES!". I fail every day at something. The important thing is to just keep going because, the time is going to pass regardless, right?! I have to keep going. I can't let my mistakes keep me in place. Reminiscing About the Weekend

I know it's Wednesday but, I'm still reminiscing about the weekend over here.

Last Friday, Nick and I took Piper out to see her first movie in a movie theater. It was so much fun! We saw the new Peter Rabbit movie and it was a great show. We all shared a giant container of popcorn and, we had some chocolaty snacks during the show, too.

After the movie was done, we went over to visit at my dad's house. Piper played with my younger siblings for a while and, watched part of a movie with them, too. It was a really chilly night and watching movies was just the perfect solution!

On Saturday, Piper stayed overnight at Gigi's house. While Piper was at my mom's overnight, Nick and I went grocery shopping and then, we had a game night with Mike and Lee {Nick's step-brother and sister-in-law}. We didn't get home until almost midnight and then, we enjoyed a quiet night's sleep with no interruptions for the first time in a long time.

Around 9 a.m. on Sunday morning, we picked Piper up from my mom's house and went out to a local diner for breakfast. This was Piper's first visit at this diner and, she really enjoyed it. She had chocolate milk and shared some of my omelet.

After breakfast, we went to church and then, had a quiet rest of the day at home.

This weekend was pretty great. There was day after day of fun, new experiences for Piper, a lot of snacking and some overeating but, despite that, I got right back on track come Monday. 

I've been holding on for dear life this week, trying to stay within my calories as best as I can, hoping to see a loss on the scale tomorrow!

Weekly Accountability in March

Hey! How was your weekend? My weekend was pretty great! More about that later, though. Today, I wanted to share my latest YouTube video with you! 

If you don't already know, I have a YouTube channel for my blog. My goal for March is to post weekly weigh-in videos to help keep myself accountable this month and so, you'll be hearing from me weekly over there {at GoalOfLosing}.

In my first weigh-in video, recorded on March 1st, I shared my weigh-in for the month as well as my goal for the month. I've shared the full video for you to watch below but, if you don't have 5 minutes to watch it, scroll down for the summary.

In January, I lost 10 pounds and, not in the best way. I started depriving myself of certain foods {like chocolate!} and I would go to bed hungry for the sake of reaching that 10 pound weight-loss goal. Did I reach my goal? Yes! Was it fun? No!

Not only was it not fun, it wasn't realistic for long-term success. In February, I gained most of my weight back because I basically went on a free-for-all, eating all of the foods that I was depriving myself of in January.

I so know better than this but, it happened. Now, I'm 'fessing up and I'm going to make some changes so it doesn't happen again.

On March 1st, I weighed in at 244.9 lbs. I do not have a specific weight-loss goal for the month, my only goal is that my weight goes down. How? Well, I am going to focus on using moderation instead of deprivation, I'll be drinking more water and getting more active.

This month, I am going to focus on my daily habits more than the weight on the scale. While I will be working on losing weight, the work is going to be done in my daily habits.

Off-Track Habits vs. On-Track Habits

Shout out to the month of March -- I've been waiting for you! So glad you're here.

If you read my post from yesterday, then you already know that February was a rough month for me. I am so happy to welcome a fresh new month with a fresh new outlook!

Honestly, I have been "off-track" from living out my healthy lifestyle for a while, now. I have been trying to get back "on-track" but, it's hard to figure out where to start. In order to help me get on the right track, I started writing out some of the habits that I find myself in when I''m both "off-track" and "on-track".

My "Off-Track" Habits:
Binging on television series / escaping reality
Routinely staying up too late (like 12 a.m. bedtimes)
Late night snacks / "second dinner"
Not drinking enough water
Eating out more frequently
Sleeping in until Piper wakes up
Lack of intention to start my day
Not tracking my what I eat with Sparkpeople

My "On-Track" Habits:
Watching more inspirational content
Going to bed at a decent hour
Planning out snacks / Meal prepping
Reaching my water goal consistently
Eating out less often
Waking up with an alarm
Starting the day with prayer and intention
Tracking everything I eat with Sparkpeople
This month, I am going to focus on living out my "on-track" habits and, I believe the weight-loss will follow.
