10 miles done!

This past weekend, my husband and I enjoyed a beautiful Saturday by exploring a new bike trail!

The trail was five miles long, surrounded by amazing scenery, following along a creek! There was a covered bridge, at the beginning of the trail, pictured above. That picture was taken after we had gone 5 miles on our bikes and back!

Along the trail, there were benches and other rest areas. My husband and I couldn't believe how nice this trail was! It was paved as a part of the "rails to trails" project. The trail use to be a railroad.

My husband and I love exploring new places. We both agree that this is our new favorite bike trail! We can't wait to go back and bring friends, too!

I made it a goal, as part of my 25 by 25 list, to try out 3 new bike/walking trails this year. One down, two to go! What a fun goal to strive for! We love to explore!

Not too much longer until my friend's big day and my debut as bridesmaid! Considering that there are only about 6 more weeks left until my Big Bridesmaid Challenge ends, I have decided to re-evaluate and amend my goal weight for the wedding. My new goal weight is 220 lbs. There is no sense in shooting for an impossible goal of 200 lbs. as it doesn't motivate me to continue onward. Having an attainable goal in sight, however, does encourage me to keep pushing forward!

Stuck Here out of Fear

This morning I did something that I haven't done in quite a while; I made breakfast! I really do believe that eating breakfast does help you lose weight. Which may be just one of the contributors to my recent struggle to get out of the 230's.

Speaking of my struggle to get out of the 230's, I sometimes wonder if I am stuck here because I am afraid. It sounds silly but even though losing 35 pounds has been extremely motivating and exciting; it has been bitter sweet, too. With every pound that I lose, I feel like I change a little more. I become more confident and more strong. Even though these are positive changes, I need to appreciate the fact that I am still dealing with change.

Change can be scary sometimes. I wonder, who will I be when I reach the 220's, 210's, and 200's? Who will I be when I finally reach "onederland"? I know that I will still be me, but will I be a better version of me? If so, what does that mean for all of the years spent weighing in at 250 lbs.? What does that mean for me weighing in at 234 lbs., today? Am I not good enough?

In order to move on in my weight loss journey, I need to remind myself of the following:

1. I accept myself just as I am now.
2. My loved ones accept me for me at any weight.
3. I will still be "me" when I lose this weight.
4. Losing weight doesn't make me a better person, having the courage to change, does.

I Didn't Feel Guilty!

Much to my surprise, when I came in to work this morning I found that a co-worker made a cherry coffee cake for the office. Normally, I would run to my seat as fast as I could and ignore the delicious treats on the counter only a few feet from my desk. This morning, however, I had a change of heart.

I took a small piece of the coffee cake back to my desk and enjoyed every bite of it! I didn't have time for breakfast this morning, so this treat along with a banana that I brought in from home was it! After I finished the coffee cake, something amazing happened; I didn't feel guilty! I felt satisfied and content. Something that I tend to forget along my way through this journey is that giving in to a small unplanned treat is okay! This journey isn't meant to be a perfect one, and striving for such a thing as that will only leave you feeling defeated and deprived. I should know, I have been there many times!

So, enjoy a small unplanned treat every once in a while! It may actually help your weight loss efforts by helping you to avoid a binge out of deprivation, later!

Seriously Simple Chicken Enchiladas

I've recently tried a new recipe as part of my 25 by 25 list. It may be a new favorite! My mom shared a recipe with me for Chicken Enchiladas. One enchilada is very filling! This recipe is super simply but can be modified even more, if you wish! For example, we added pinto beans and it tasted great. My husband suggested adding green chiles. You could even top them with sour cream and black olives; the options are endless!

New Recipe #14 of 25

Seriously Simple Chicken Enchiladas

Serves: 6
Nutrition per Serving: 368 calories, 10 fat, 32 carbs, 33 protein


1 lb chicken (chopped into bite size pieces)
8 oz. fat free cream cheese
16 oz. mild salsa
1.5 cup shredded cheddar
8 medium flour tortillas


1. Preheat oven to 375 degrees. Cook chicken in skillet over medium heat; drain.

2. Add 1/2 jar of salsa and 8 oz cream cheese to skillet with chicken. Stir on medium heat until cream cheese is melted throughout. Typically 10 minutes.

3. Spread 2 tbsp. of salsa to bottom of casserole dish. Add 3 tbsp of chicken mixture to each tortilla and roll up. Drizzle remaining salsa on top of enchiladas. Sprinkle with cheese.

4. Bake enchiladas for about 15 minutes.

Cake and Ice Cream

Last night, my husband and I had his father over for cake and ice cream. It was my father-in-law's 55th birthday! In effort to keep myself away from the cake, I bought a really small one. Even so, there was still half of the cake left. The other half is sitting in my fridge as I write this. I have had enough self control to not have a piece, so far! Instead, I had two 100 calorie ice cream cups for my dessert. They were easier to calculate nutrition-wise and just as yummy!

The last time that we had my father-in-law over was for our Memorial Day Picnic this year. We had all four sides of our family over, actually. By hosting this picnic, I was able to cross an item off of my 25 by 25 list; "host a family picnic". By having my father-in-law over last night, I am another step closer to crossing off "invite father-in-law over for dinner 5 times" this year, too! I kind of feel bad that I had to put something like that on my list, but it was something that we weren't good at doing last year. By making it a goal to accomplish before I turn 25, I am looking for any opportunity to have him over for dinner. Hopefully this habit will stick with us through next year, too. We are horrible at inviting people to come over to our house. I think we are just so use to some people stopping by whenever they want!

After running our first 5K this past weekend, both my husband and I seem to be up a bit on the scales. I am wondering if this is normal after a race? Let me know if you have heard about or have experienced this before. We are both stumped! (And yes, the rise in the number on the scale did occur before the cake and ice cream from last night!)

My First 5K Race - Recap with Pictures

The Sunset Shuffle, otherwise known as "the ice cream race" began at 7:15 p.m. this past Saturday. I was motivated and signed up for the race on National Running Day. My husband said that he would run with me and we were both excited to attend our first 5K.

When we arrived to the park, the weather was perfect! It was about 78 degrees with a slight breeze and cloudy skies. I saw a bunch of tents lined up as we pulled up to the park and I got so excited! When we went to the registration table, we received our numbers and our shirts. Since we arrived early, we had a little time to go back to the truck and take some pictures.

At 7:00 p.m. the kid's race began. All of the people who were participating in the 5K after the kids race lined up and cheered the kids on. It was so much fun to support them! Everyone was having fun and seemed so happy to be there! After the kids race, which lasted about 10 minutes, all of those who were participating in the 5K started to line up. My husband and I were in the middle of the crowd. Whenever the horn blew, everyone started to jog. It was a slow pace for a couple of minutes as everyone found their place on the trail. We passed some people and some people passed us. We ran for well over 1/4 mile until we hit our first incline. That's when we took a walking break. We alternated between running and jogging for the rest of the trail.

There was a time throughout the 2nd mile when I started to feel discouraged. I knew that I was racing against only myself, but it was hard to see some people lapping others. Whenever my husband brought it to my attention that there were people lapping others, I said "that's because they are runners". Thinking about that now, I don't know what I meant. Does that mean that we aren't runners, just because we weren't going as fast as the others? No way! We were running as much as we could. Rather, we were running as much as I could! My sweet husband stuck by my side the entire time. He could have finished the race much sooner than I, but he wanted to cross that finish line with me.

 After a lot of sweat and tears, we were finally to the last 1/4 mile of the race. Since this was a "fun run" 5K, there was a DJ and food waiting across the finish line. As we got closer to the finish line we could hear the song playing through the speakers at the tents; it was "We Are Young" by Fun. My goal was to finish the race within 60 minutes and we knew we were cutting it close. We could barely see the timer as we started to run for the last time. Between the song (which is one of my favorites) and everyone clapping ahead at the finish line, I felt like I was on top of the world. My husband and I were running and he said "59 minutes. It says 59 minutes!" We started to run faster because I WANTED to pass the finish line before the timer hit 60 minutes. As we got closer and I could read the timer more clearly, I shouted to my husband "It says 51! It says 51!!" I started to cry when I realized that I met my goal before even crossing the finish line. Then, I looked to my husband and we started to laugh. I ran through the finish line at 51 minutes and 47 seconds. My husband finished one second behind me. There are no words to explain how accomplished I felt when we finished. We did it! We finished our first 5K race!

After we grabbed a bottle of water, we went back to the truck to grab the camera. After we took pictures, the arch in my foot felt like it was cramping. I sat down in the truck and tried to rub my foot. It was a pain I have never felt before. We had to sit at the truck for a good five minutes before I could walk back to the tents without (noticeably) limping. When we got back to the tents we were looking for the ice cream since this was known as "the ice cream run".

My husband was very disappointed to find that there was no ice cream left for us. Instead, there were pepperoni balls. We both grabbed one and sat in the grass to stretch. Sitting in the grass felt amazing. There was a raffle in which Nick's number got called. He got a sticker and we put it on his truck before we went home.

Our first 5K race was one that we will always remember. I can't wait until our next! I can definitely see why people get hooked to racing. Next time, I want to beat 51 minutes!

I am not very disappointed in my weight gain this week. It is only 1 pound and even though a part of me is so tired of being in the 230's, the other part knows that I will get out of this rut someday! I went on a business trip this past week which didn't help matters. I tried to eat (mostly) healthy but it is definitely a challenge when eating out for breakfast, lunch and dinner!

Today I have spent most of the day recovering from my very first 5K race. My husband and I participated in our first 5K race last night! I will post a blog about our experience tomorrow. For now, I am going to continue with my recovery and relax for the rest of the evening!

Photo Update from our "Vacation"

Okay, so I went on a business trip this past week and I brought my little (16 year old) sister with me. The plan was to fit in as much fun stuff around my meetings to make it seem as if we were on a vacation instead of a business trip; I think we succeeded.

My mom bought us matching cups before we left on the trip. I love them!

My little sister drove half of the way. This was bitter sweet! How is she old enough to drive?!

The hotel welcomed us with brownies and cookies. My sister took one for the team and ate them all; including her package of mini donuts. I don't know why she is the skinny one!

After arriving at the hotel, we decided to get dressed to go jogging in downtown Harrisburg!

It was about 80 degrees, sunny with a slight breeze. Beautiful!

As we approached this bridge, we decided to jog the entire way to the other side.

I wouldn' t have made it if it weren't for my sister telling me "you can do it; just keep going" the entire second half of the bridge. I love this girl!

After that, we changed and went to starbucks to refuel before going to see a movie. Yes, I poured my green tea in to my cute cup because it is my favorite! :)

After the movie we went to Applebees for dinner. I had a house salad to start.

I had the shrimp and sirloin with potatoes and broccoli.

My sister had cheese sticks, tacos and mini burgers.

We each got a little cup of dessert.

The next day, after my meetings, we went shopping where I got this new watch.

We got pedicures, and it was my sisters first one!

I also got a great deal on this dress (originally $90 got it for $14!)

After shopping, my sister and I went to eat at the Firehousein downtown Harrisburg. The appetizer we chose was stuffed peppers, escargot stuffed mushrooms with some sort of duck (which are the meatball looking things!)

Since my sister is able to drive me around, I had a glass of wine and the calamari and steak salad. It was delicious and came in a really cool bowl!

After dinner, we went to the movies, yet again!

The next day we made sure to grab lunch at panera bread before leaving for home!

I tried the mediterranean veggie sandwich and their house salad. They were both really good!

After that, it was time to go on to Electric Avenue. Just kidding, we saw that sign and couldn't help ourselves. We arrived back home last night and even though I had an awesome time in Harrisburg, nothing beats coming back home!

No big change this week, weight wise. I have been stuck in the 230's for what seems like an eternity! I've got three big goals for this week and those are to 1.) survive my business trip without gaining any more weight; 2.) go to the gym while out of town; 3.) complete my first 5K race on Saturday!

I am not even nervous in the least bit for this race. It is a little different than other 5K races in that this is a "fun race" and it starts at 7:00 p.m. (that's why it's called the Sunset Shuffle.) What I need now is some advice!

What should I eat the day of the race since it starts at 7:00 p.m.? How long before the race should I stop eating and drinking? I appreciate any feedback!

I Must Be Crazy!

I must be crazy! Did you know that yesterday was National Running Day? Well, I found that out after reading an article yesterday afternoon around 2 p.m. The crazy thing is that by 3 p.m. I was registered for a 5K. Want even more crazy? The 5K that I signed up for is only 10 days away!
As a part of my 25 by 25 List, I need to complete my first 5K before I turn 25 in February, 2013. I was registered for a 5K in April this year; however, I caught pneumonia and couldn’t walk, let alone run. I was so upset that I had to miss that 5K, I haven’t run since. With this 5K being only 10 days away, that is about to change, fast!
After reading the article on National Running Day, I was inspired to give my dream of completing my first 5K another shot. I searched my local running club’s events to find that I could either register for an event 10 days away or 4 months away. There was no way I was going to wait another 4 months. I am motivated to do it now! The 5K that I signed up for is called the Sunset Shuffle, also known as the Ice Cream Run. That pretty much sold it for me. It’s a “fun run” that starts at 7:15 p.m. After the run there is an “after-party” which includes a DJ, hot dogs and ice cream. I now believe that I missed my first 5K for a reason (other than being sick with pneumonia); this Ice Cream Run was meant to be my first 5K, naturally.
Last night my husband and I went to the track and jogged/walked 1 1/2 miles in 30 minutes. We are hoping to complete the 5K in about 60 minutes next Saturday.

During the last lap on the track we both started talking about dinner, only we weren't talking about the steak salads that were originally planned for dinner. Instead, we were talking about deep fried chicken wings, cheesy breadsticks, deep fried zucchini dipped in ranch, and pizza. We were basically drooling as we walked to the car, but we stayed strong. I said "if we aren't satisfied after our steak salads, we'll talk about ordering something". Our steak salads were huge and ended up being really filling. I'm glad that we stuck with the meal plan. It was really good, and really good for us!

Guilt Consumed Me

After yesterday's shocking realization that I hadn't been to the gym in 3 months, I finally went last night and it was great! I started back slow by doing 10 minutes on the treadmill, 10 minutes on the stationary bike and 5 minutes on the elliptical. I made sure to go straight to the gym after work which helped eliminate any excuse I could have thought up. My husband joined me at the gym which was also great! Whenever we got home, I made dinner. I stuck to my meal plan and made brown sugar garlic chicken over noodles.

After dinner, I went to my moms house with our dogs to let them run around with her dogs. My plan for my dogs to use up all of their pent up energy worked like a dream because whenever I got home they were ready for their evening nap. This gave me some time to clean the dishes. After I was done cleaning I was craving a snack. This weekend I made the mistake of buying oatmeal cream pie cookies by little debbies. To make it worse, they ended up being the double stuffed 12 pack. I told myself that I was buying them for my husband's lunches, but it ends up that I am the only one who has eaten them so far. There are three missing and one of them "went missing" last night after dinner. I would love to say that it was a waste of 330 calories but at the time it was worth double that. The 170 calories worth of riesens (dark chocolate caramel bites) that I ate after the oatmeal cream pie cookie was actually a waste of calories. I only ate those because they were sitting out and I had little self control as my guilt consumed me for consuming a oatmeal cream pie cookie.

I did, however, have enough self control to end the vicious cycle of binge/guilt/binge/guilt after eating the riesens. I decided that I would work out some more since I had a mini binge. I did 30 minutes of Wii Fit and felt much better about myself afterwards. The gym and Wii Fit all in one night? Despite the mini binge, that is something to be proud of!

What is Wrong with Me?

Guess what! I didn't follow my dinner and exercise plan last night for the fourth week in a row! What is wrong with me? I am so determined throughout the day, but once I get home from work I feel so drained and just cave. Last night it was Chinese food (yet again) and absolutely no gym time. I looked at my calendar and I really do believe that I haven't been to the gym since March. Three months of making a plan to go and not following through. How does that happen?

Last night my husband and I went grocery shopping for the first time in two weeks. We were seriously in need of groceries and I am feeling so much better now that we have a stocked fridge. It's much easier to make healthy choices when you have the choice to make! This crosses one excuse off of my list of why I cave in to bad choices while at home. The other excuse of "I'm too tired" is going to be the next one that I overcome.

So, now that I have groceries in the house again, for breakfast this morning I tried Special K Chocolate Pastry Crisps. They were really good and only 100 calories!

My husband is an awesome baker and cook. This weekend he baked two custard pies. This morning I brought the second pie in to work before we ate it all ourselves.

It's 10:00 a.m. and my co-workers are working on eating the pie already! I, however, am going to keep my distance from this delicious dessert. I had a slice over the weekend and that is all that I need.

Even though I am extremely frustrated with myself, I am keeping a smile on my face.

I am shocked to see how long I have been putting the gym off. Tonight I am focusing on myself because I deserve it. I am going to make the dinner planned for tonight and I will be going to the gym on my "rest day" since I didn't go last night!
