Who loves broccoli salad? I sure do!
I bought some fresh local organic broccoli last week and whipped up this salad for an awesome lunch side.
I don’t typically make this, but it’s actually so easy and so much better with fresh local broccoli. I figured I’d share this recipe now while you can still grab local broccoli or use your own depending on if you grow it, and where you live.
Broccoli Salad Recipe (courtesy of this link)
- 4-5 cups Broccoli, chopped small
- 1/2 cup dried cranberries
- 1/2 cup crumbled bacon
- 1/2 cup sunflower seeds
- 1 red onion, diced
Mix it all together, then in a separate bowl make the dressing.
- 1 cup Mayonnaise
- 1 tbsp Apple Cider Vinegar
- 3 tbsp Sugar
- 1/2 tsp salt
- 1/2 tsp pepper
Whisk the dressing ingredients together, then pour over the broccoli mixture. Easy as that!
